Giant S’mores Cake Recipe

Guys, this is not a drill, we’ve turned everyone’s favorite campfire treat into a cake!!! One of my favorite things to look at online are cakes that look like other food. I’m sure you’ve all seen a hamburger cake in your lifetime, but what about a giant s’more?! We’ve made our fair share of s’mores on here (psst, cotton candy s’mores), but we’ve never transformed any of them into cakes. And as it turns out, it’s SO easy to make a giant s’mores cake because an iced cake already looks like a marshmallow! Just add on the graham crackers and chocolate, and you’ve got one delicious cake that’s almost too cute to eat!

                       

For the cake: 

2 boxes of vanilla cake mix
6 eggs
2 cups water
2/3 cups vegetable oil
Vegetable shortening or cooking spray
6″ cake pan

For the buttercream frosting:

1 stick of butter, softened
1/2 cup vegetable shortening
1 teaspoon clear vanilla extract
4 cups powdered sugar
2-3 tablespoons milk

1 container of chocolate frosting
Graham crackers

                   

For the cake:


1. Combine all ingredients in a large bowl and mix until the lumps are gone. 

2. Preheat your oven to 350 degrees Fahrenheit. Fill three 6″ cake pans with equal amounts of batter and bake for 20-25 minutes or until they are browned and a knife comes out cleanly. Place on a cooling rack to cool completely. 

3. Once the cakes are cooled, cut off the tops of them so they are flat when stacked. 



For the buttercream frosting:

1. Add the softened butter and the shortening to a large bowl and combine. 

2. Combine the butter mixture with the clear vanilla extract. Put your mixer on low and add the powdered sugar, half a cup at a time until it is all combined.

3. Add 2-3 tablespoons of milk and continue to mix until there are no lumps and the buttercream is smooth. 



To assemble:


1. Use the buttercream frosting to ice the top of two of the cakes. Place one cake on top of the other, and finish off with the last cake. 

2. Ice the outside of the cake with the buttercream and smooth it out using a spatula. Once it has been iced completely and has dried a little bit, you can use a sheet of parchment paper, pressing down on the cake to get out any wrinkles. 

3. Place the cake on top of a bed of graham crackers. Warm the chocolate frosting in the microwave for about 20 seconds. 

4. Cover the top of the cake with the chocolate frosting. 

5. Place another square of graham crackers on top of the cake while the chocolate frosting is still wet, and you’ve got yourself one giant s’more!

I know what cake I’ll be asking for for my next birthday. Ha! With the weather warming up and campfire season quickly approaching, this is totally the icing on the cake (get it?) to making your bonfire party complete!
