Mini Two-Tier Birthday Cakes

So as we all know by now, I love me some mini desserts! With pretty much all food, a mini-sized version is always cuter. So I freaked out (only a little bit) when I was browsing the baking section of Amazon and found this pan. We can make MINI BIRTHDAY CAKES with it! Move over cupcakes, this is the new personalized cake for birthday parties and parties alike. Now, this is one of the easier tutorials since the pan does a lot of the work for you, but I’ve been working on perfecting a recipe to make these babies flawless and I’m sharing it with all of you! Also, points to any of you that recognized that I decorated one of the cakes to look like the emoji cake! (I’ve been wanting to make a real life emoji cake for SO long now). Are you ready for a sugar rush? Let’s get baking!

   

Two tier cake pan (I bought mine here)
Cake icing & sprinkles for decorating

1 1/2 sticks softened butter
1 1/2 cups sugar
4 oz cream cheese
4 eggs
1 1/2 cups self rising flour 
1/2 teaspoon salt 
2 tablespoons vanilla extract

 

1. Preheat oven to 350 degrees Fahrenheit and spray pan with nonstick spray. Put butter, cream cheese, and sugar in a bowl and cream together until smooth. 

2. Add eggs and vanilla and mix until fully incorporated. Pour in flour and salt. Mix thoroughly until there are not lumps.

3. Fill each cup slightly past the first tier. Bake for 15 minutes and then turn the pan for even baking. Bake for another 12-15 minutes. Let completely cool before removing cakes from pan. 

4. Cut the bottom of the cake off so it lies completely flat. Put icing on the outside and decorate with sprinkles! 

If this isn’t the most adorable slice of cake, I don’t know what is. So you guys are only going to eat mini birthday cakes from now on, right? Thought so, I can’t resist the cuteness either. It’s totally acceptable to eat these in only a few bites too. (I may have attempted that yesterday after photographing this post) Anyways, have a blast making these, and get some mini balloons for a little mini party!
