Pink Flamingo Marshmallow Recipe!

Who’s ready to FLAMINGLE?! Since I just left New York where it is currently snowing and freezing to come to sunny Palm Springs, I thought it was only fitting to mix both worlds and make some pink flamingo marshmallows! Plus, normal marshmallows are boring when you can have ones shaped like flamingos, am I right? I’ve been seeing “unicorn hot chocolate” EVERYWHERE, and I’ve been wanting to try it out, but the closest thing to unicorn hot chocolate in NYC is colored hot chocolate, so we’re teaching you how easy it is to add a bit of color to your hot cocoa too. Bring on the pink overload!

supplies

3 packages of gelatin
1 1/2 cups sugar
1 cup light corn syrup
1/4 teaspoon salt
1 tablespoon vanilla extract
Powdered sugar
Pink food coloring
White hot chocolate mix (here)
Small flamingo cookie cutter (here)

how-to

1. Mix the gelatin and 1/2 cup of cold water in a large bowl and set aside.

2. In a saucepan, combine the sugar, corn syrup, 1/2 cup of water, and salt and cook over medium heat until the sugar is dissolved. Increase the heat and cook until 240 degrees on a candy thermometer.

3. Slowly pour the syrup into the gelatin, mixing on low speed. Add the vanilla and pink food coloring and mix on high until the mixture is thick and starts to form soft peaks.

4. Dust a baking pan with powdered sugar and pour the marshmallow into the pan. Smooth the top with a spatula and let sit out overnight until completely dried.

5. Remove the marshmallow from the pan and dust your cookie cutter with powdered sugar. Cut flamingo shapes out of the marshmallow.

6. To make pink hot chocolate, add pink food coloring to your white hot chocolate mixture. Add in the flamingo marshmallows and viola!
