Mini Peppermint Hot Chocolate Donuts

It was actually cold out this past weekend (it definitely hasn’t been feeling like November here yet), and with all of the cold noses and hands, what’s better than a huge mug of delicious hot chocolate you ask?! Well, HOT CHOCOLATE DONUTS of course! And peppermint flavored to be exact. That’s right folks, we took one of your favorite cold weather drinks and turned it into the perfect mini donut. Trust me when I say this is one good chocolate donut.

       

For the donuts:

1 cup flour
1/4 cup hot chocolate mix
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dark brown sugar
1/2 cup buttermilk
1 egg
4 tablespoons butter, melted
1 teaspoon peppermint extract 
Crushed peppermint for garnish
Mini marshmallows for garnish

For the icing:

1/2 cup heavy cream
2 tablespoons corn syrup
4oz chocolate chips

    







For the donuts:

1. Preheat oven to 325 degrees Fahrenheit. Use shortening to grease a mini donut pan and set aside.  

2. In a large bowl, mix together the flour, hot chocolate mix, cocoa powder, baking soda, salt, and brown sugar. Set aside.

3. In another bowl, whisk together the buttermilk, egg, butter, and peppermint extract until combined. 

4. Pour the wet ingredients into the dry ingredients and mix until just combined. Put the batter in a piping bag and fill the cavities of the mini donut pan 2/3 of the way. Bake for 8-10 minutes or until a toothpick into the donut comes out clean. Place on a cooling rack. Allow to cool completely before decorating. 



For the icing:


1. Place the heavy cream and the chocolate in a microwave safe bowl and microwave on high for 30 seconds. Remove from microwave and stir. Add in the corn syrup and put back in microwave for 30 seconds or until chocolate is melted. Mix well until all chocolate is melted and dip in the donuts to ice them. 

2. Top with mini marshmallows and crushed peppermint and place on the edge of your hot chocolate mug for easy access dipping!

Definitely donut be afraid to dip these babies right in your hot chocolate either! It’s double the hot chocolate flavor and double the yum! What other drinks do you want to see turned into donuts??
