Ice Cream Sundae Taco Bar

Holy guacamole, taco ’bout an ice cream sundae! (We’re going heavy on the puns today. Ha!) I’ve been seeing everyone FREAK over places that sell ice cream sundae tacos lately, so we thought we’d take it a step further and make them actually look like TACOS! This is our last big hurrah to Summer (since it’s technically the first day of Autumn today) and we definitely wanted to go out with a bang, Aww Sam style. I love tacos and I LOVE ice cream, so why not put the two together in a mash-up that’s hilariously adorable and also delicious to eat?! You could even go all Chipotle with this and make a “burrito bowl” instead. So set up your ice cream sundae taco bar and get snackin’! 

           

Chocolate ice cream
Waffle bowls (here)
Coconut flakes
Green food coloring
Yellow sprinkles
Red hots (here)
Whipped cream

         

1. Wrap one of the waffle bowls in a damp paper towel and put in the microwave for 15 seconds. This should soften the waffle bowl for long enough so that you can re-shape it into a taco shell shape. Do this action quickly because the bowl will start to harden after being removed from the microwave.

2. Put about 1/2 of a cup of coconut flakes in a bowl and dye with the green food coloring for your “lettuce.”

3. Add chocolate ice cream to the waffle taco shell and top with the lettuce, yellow sprinkles for cheese, red hots for tomatoes, and whipped cream for sour cream. Enjoy your ice cream taco sundae!

Taco Tuesday was yesterday, but I think it’s totally appropriate to extend the taco celebrations into Wednesday too. Now you can eat tacos for dinner and dessert (and technically breakfast if you count the breakfast taco). Tacos for every meal! Ha!
